Rotisserie drives the kitchen at Brooklyn's Risbo, and Chef Boris Ginet uses the spit-fire to produce a slew of succulent protein. Aside from his signature chicken, Ginet churns out whole fish like branzino, served smothered in a berbere-spiced tomato chermoula with lots of bright, fresh herbs.

This "fast-casual rotisserie + bar" serves a mashup of globally inspired dishes, celebrating Brooklyn's vibrant immigrant roots. The vibe is distinctly casual and cool.

Nice easy atmosphere inside too, good for groups. The food feels like home, but in modern space. The music is good.

Chef Boris Ginet, restaurateur and owner of Bib Gourmand-nominated restaurant Risbo. Now, he’s focused on creating a “conscious practice I’m passionate about upholding in my restaurant as much as possible.”

The multi-level space has a mix of tables and ground-level seating options where you can sprawl out on bright-colored cushions and poufs.

And while its whitewashed walls lined with artistic photos, industrial-chic cement floors and a glorious garden patio hint at its Brooklyn locale, the anchor here is the open-air, Parisian-style rotisserie, churning out a host of delectably roasted items.

Chef and owner Boris Ginet immigrated to the U.S. 26 years ago and opened this fusion restaurant with the goal of creating a warm space for folks to come and dine family-style in Brooklyn.

Before all the restaurants closed down, I liked to go to Risbo for brunch. It’s an amazing place in Flatbush. My friend Boris is the chef and owner.

Risbo’s backyard is spacious enough to host a tasteful wedding. And if you live near Flatbush, it’s a good place to know about.

At Risbo — an idyllic restaurant on the Parkside side of Prospect Lefferts Gardens — the mighty bowl ($13) also comes with rice, sautéed greens, spicy cabbage salad, hummus, pickled cranberries, and red onions.

On a stretch of Flatbush Avenue dense with takeout shops specializing in jerk chicken and the Caribbean staples that go with it, the rotisserie-and-sides concept seems not like a disruptive alternative but, rather, like a natural extension that piqued my appetite for all that the neighborhood has to offer.

Paris-born, Brooklyn-based chef Boris Ginet, for one, has met this market-sector challenge not with a better buzzer or a snazzier app but with a weapon previously undeployed in this arena: the Vibe.

The restaurant will open with evening hours only, but may extend to brunch and lunch eventually. A full backyard at the space will open next summer, he said.

Over the past 15 months, a shop on the Prospect Lefferts Gardens stretch of Flatbush underwent major renovations. Each day, chef-owner Boris Ginet was at his new restaurant, Risbo, overseeing and personally executing every element of the build-out.
